With the acquisition of Tahoe Trips & Trails, an established guide company dedicated to connecting visitors with the natural world, Cedar House now also offers inspiring hiking and multi-sport tours in Tahoe-Truckee as well as stunning locations throughout the West. Each world-class adventure is facilitated by professional guides who love to share their knowledge of local history, geology, and flora and fauna.

“When we first opened Cedar House, it became evident that marrying Tahoe Trips & Trails with our business was an ideal match,” explains Patty Baird, co-owner of Cedar House Sport Hotel with her husband, Jeff. “Our concept was influenced by small, family run hotels found in the Alps, however, its design was inspired by nature. It is our belief that the psyche connects to all things real, so the materials chosen for Cedar House promote harmony between the structure and the natural world. Design plays a vital role in the underlying theme of the Cedar House – which is all about connections.”

Cedar House announces an array of outdoor and culinary adventures for the upcoming season.

SUMMER 2011 OUTDOOR + CULINARY ADVENTURES
Wholesome meets delicious Cedar House Sport Hotel’s Stella, a restaurant that celebrates the dining experience.

“We live in a fast pace world, where technology has changed the methods of how we communicate and connect to one other. At Cedar House, we help our guests connect and reconnect to nature through outdoor adventures and wholesome ingredients,” Baird explains.

Cedar House’s summer calendar kicks off with acelebration of wild plants and mushrooms, game and seafood. Indulge in The Forgotten Feast with Hank Shaw author of “Hunt, Gather, Cook: Finding the Forgotten Feast” on July 16. Shaw spends his days thinking and writing about ways to cook and enjoy anything that walks, flies, swims or crawls.

He explains, “I am the omnivore who has solved his dilemma.” The Forgotten Feast begins with cocktails and a book signing by Shaw at 5:30 p.m. and is followed by a five-course tasting menu inspired by Shaw’s book ($75 plus tax and service includes cocktails and wine). Stella’s Winemaker Dinner Series, featuring five-course meals designed by Chef Jacob Burton, kicks off on June 17 with winemaker Ray Coursen from Elyse Winery. Additional dates / winemakers will be announced. Each dinner costs $95 plus tax and gratuity.

Cedar House’s Summer Hiking Series kicks off on the Rubicon Trail on June 18. Each hike includes an engaging professional guide knowledgeable in flora and geology, Stella Endurance Lunch, and transportation. The cost is $65 to 85 per persondepending on location. Hikes include Ellis Peak on July 2, Shirley Canyon on July 23, Mountain Judah Loop on August 27 and Donner Summit to Squaw on September 3.

The Active Gourmand Tour is the perfect four-day adventure for hikers who love to cook. The Tour, available July 17 to 21 and August 7 to 11, is for those that love the outdoors and have a true passion for food and wine. Enjoy scenery packed day hikes followed by an early evening cooking class and wine dinner.

Chef Jacob Burton will guide you through a multi-course culinary on seasonal cooking in a professional kitchen. The cost is $1,800 (double occupancy, includes lodging, all meals, guides, transportation, cooking instructions, wine). The cost is $1,299 per person without lodging.

There will be cooking demonstrations on July 23 and August 20. Summer Canapés and Appetizers on July 23 features the basic composition of bite sized hors d’oeuvres, garnish and plating with four different wines from California. Learn how to design canapés and plan wine pairings during this class. Chef Jacob explains, “Utilize summer’s abundant produce with a lesson on appetizers and their little cousin, canapés.

With a focus on flavor structure, textures and presentation, leave with the tools to truly impress at your next gathering or dinner party.” During the Composed SaladsDemonstration on Aug. 20, learn to mix flavorful vinaigrettes and select specialty greens for an exceptional salad mix. Techniques for proper storage of salad greens will be discussed and the class features four wines from four different contents.

Learn to choose the right green for the job, techniques for washing and storing greens for maximum flavor retention and modern techniques to enhance texture, flavor and visual appeal. Recipes for Stella Classics like butter lettuce, mixed greens, duck confit and heirloom tomato salads will be explored. Each cooking demonstration includes wine, taste and lunch. The classes take place at Stella from 11 a.m. to 1:30 p.m. and each class is $55 plus tax.

While hiking with the spectacular backdrop of the Tahoe area, practice how to observe and capture extraordinary images in nature with fine art photographer Niobe Burden during the Lake TahoePhotography and Hiking Adventure from August 18 to 21. The cost is $1,150.

Summer 2011 is only the beginning of Cedar House Sport Hotel’s offerings. Expect new Tahoe-Truckee tours including three generational family tours (3G Tours) and dog hikes (“A day in the Life of a Tahoe Dog” and “Tails on the Trails”).
